Avocado Toast 2 Ways

Okay okay, you asked for it so here’s one more awesome and easy recipe from the very talented, Chloe.

Everyone who’s anyone knows that it’s really hip and trendy right now to eat avocado toast. And although there are a million restaurants you can go to and pay $15 for one slice, why not give it a go at home? I actually make avo toast (what all the cool Instagram people call avocado toast) several times a week at home because it’s incredibly delicious, has a nice healthy kick to it and if I’m low on Insta pics, I can snap one really quick and I’m good to go.

For this post, I whipped up avo toast two ways. One with an egg and one without because maybe sometimes an egg just doesn’t sound good or you’re out the door and don’t want yolk all over the place. And that’s one of the best things about this trendy little meal—you can add or subtract just about anything to it and it’s still super delicious.

So although I technically developed a few “recipes” for you how to up your avo toast game, as long as you have avocado and bread, you can pretty much do whatever you want and it’s guaranteed to be good.

For all intents and purposes, though, here are two of my favorite ways to eat avo toast:

Option 1

Ingredients

Whole grain sprouted bread

1/2 an avocado

A few slices fresh or pickled red onion (I used fresh here, but pickled is very good as well)

1 tbsp feta

1 tbsp hemp seed

Salt and pepper

Instructions

Toast bread to your liking

Slice avocado half and scoop onto bread, gently mash or leave in slices

Apply thin slices of red onion

Sprinkle feta on top

Add salt and pepper and hemp seeds on top

Option 2

Ingredients

Whole grain sprouted bread

1/2 an avocado

1 egg, poached (you can do this quickly in the microwave by filling a small dish with water, cracking your egg into it and microwaving for 45 seconds)

A few spinach leaves

Salt and pepper

1 tbsp hemp seed

Red chili pepper flakes

Instructions

Toast bread to your liking

Slice avocado half and scoop onto bread, gently mash or leave in slices

Poach your egg in a pot on the stove or follow instructions noted above for microwave

Lay your spinach on top of the avocado

Gently put egg on top of spinach bed

Add salt, pepper, hemp seeds and chili flakes on top

Now, how delicious do both of these sound? I know they’re nothing groundbreaking, but sometimes the simplest things taste the best!
