The Bruncher’s Casserole

This weekend I made quite possibly the best egg casserole I have ever tasted. It was meaty and cheesy and just full of Saturday goodness.

I made a rather large dish for Chris and I with the intention it would last a few days. As of today it’s completely gone. So it lasted just a little over twenty four hours. If you’re a fan of breakfast food like I am, I highly suggest you make this next weekend. I should also probably let you know I doubt it’s very healthy… But if you make it on a weekend what does that matter? We all know weekends are free game.

So here’s the recipe. You can thank me after you make it. Keep in mind I don’t actually measure anything when I cook, so… so do what you want is what I’m saying.

The Bruncher’s Casserole
12 medium eggs
3 cups milk
1/2 tsp ground black pepper
1/2 loaf French bread, cut into cubes (approximately 8 cups)
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
1 cup of mushrooms
3/4 of scallions
12 slices of bacon, cut into small pieces (you can use turkey if you feel like being healthyish)
4 sausage rounds cut up (we’re just fatties so we like double meat)
1 (8 oz.) package shredded sharp cheddar cheese
LAWRYS it all at the end. Always add Lawrys.

Mix all ingredients together in the bowl of whisked eggs.

Pour into a well greased pan.

Bake at 350 for 50-55 minutes. While you’re waiting it’s best if you make yourself a Bloody Mary. Chris was the master of these yesterday. On the skewer you see: cheese, mushroom, beef jerky, pickle, bacon and more cheese…. We go all out weekends.

When you’re just about done with your Bloody Mary appetizer your casserole will be ready. And look at this amazing dish you just made!

Heaven.

    Serious question – how do you reheat this? Microwave, toaster oven, what? I will rock the shit out of cold pizza but cold eggs make me gag.

    All I can say is YUM! I looooove brunch. My cousin makes a Paula Deen hashbrown casserole that is beyond amazing.. and I'm pretty sure I've had it four times in my life and that probably means I'm going to die four years sooner because of those four occasions. So. Damn. Good. Beef jerky on a Bloody Mary!! Genius. He's a genius.
