During the summer our house sometimes feels like a hotel because we have friends and family staying with us almost every weekend. I think that’s just one of the benefits of living in a fun city like Chicago. Because oddly enough we never had a lot of people asking to come stay with us when we lived in Topeka, Kansas for those long seven months long, long ago… Anyway, I honestly love having people “vacation” at our house because it makes me feel like I’m on vacation, as well. And I happen to be really good at pretending I’m on vacation. The only downside to this is that I find myself eating like I’m on vacation way too much. I rationalize that our guests are eating pizza and hot-dogs and pasta all day, so I might as well too. But after two months of eating heavy, I am feeling heavy.
So I decided it was time to opt for a few healthier options. One of my favorite meals I’ve been cooking lately is this loaded black bean burger.
The best part is it takes me less than ten minutes to make. Not to mention it’s delicious and pretty healthy even.

Pile it all on top of each other and there you have it, a pretty nutritious and simple meal. I could have probably given myself a little bit less guac, but c’mon, you gotta live a little.
I’m also anxious to try the MorningStar Farms Mediterranean Chickpea Burger and Roasted Garlic & Quinoa Burger . They also provide a ton of recipes on their site for different ways to eat healthy and incorporate their meatless meals into your everyday life.
I’ll never be able to give up my French fries or pizza completely (and I don’t want to obviously), but I think it’s all about moderation. Eating healthy doesn’t have to mean eating bland food, at least I don’t think so anyway.
